Recipe: "A Blondie Walks into a Bar"

You know what's better than an ice cold beer? A pastry. And don't you think that a pastry flavored with said beer would be a beautiful pairing? I sure do! And thus "A Blondie Walks into a Bar" was born. I hope y'all love it!

  1. 1/2c butter
  2. 1c packed dark brown sugar
  3. 1 egg
  4. 1/2t salt
  5. 1t vanilla extract
  6. 1/4t almond extract
  7. pinch of cinnamon
  8. 3T stout beer
  9. 1 1/2c sifted AP flour
  10. 1/4t baking powder
  11. 4oz roughly chopped toasted nuts (I used almonds, walnuts, cashews, and pecans because that's what was in my pantry and yummm.)
1. Preheat the oven to 350 degrees F.
2. Grease an 8 or 9 inch square pan. 

3. Melt the butter in the microwave. 
4. Add the brown sugar to the melted butter and combine. 
5. Mix in egg, salt, beer, and both extracts. 
6. Stir in flour, baking powder, and cinnamon. 

7. Fold in 1/2c nuts until evenly distributed. 

8. Pour the batter into the greased pan. 

9. Top with leftover nuts. 

10. Bake for about 25 minutes, you should see the edges getting a lil' toasty and starting to pull from the edges. 

11. Double check for doneness with a toothpick. 
12. Let cool on a rack and then cut. 

13. If you want to be a little fancy, you can top with a glaze of your choice. :)
14. I used some caramel I had leftover from another recipe and it paired very well. Due to the caramel being so thick, I did trim the loops it made because I thought it looked prettier.

*TIP: If you have some leftover roasted white chocolate from our last recipe, this would be the perfect time to melt it back down and use it as a glaze!*
